Crockpot Apple Butter.
1 dozen peeled, cored and cubed apples.
1/2 cup water.
1/4 cup brown sugar.
1/2 tsp cinnamon
1/2 tsp all spice...

Toss the apples in the sugar and spices.
Put everything in the crockpot and cook on low overnight and then cook on high with the lid propped open until you reach the consistency you would like.

Makes 1 pint.

Grilled Shrimp with Lime Sauce and Peanuts

Now that the grill is open for the season, how about some grilled shrimp this weekend?

Ingredients

  • 2 limes
  • 2 teaspoons fish sauce
  • 1/2 teaspoon sugar
  • 1 pound (about 15) jumbo shrimp, shells on
  • 2 teaspoons safflower oil
  • Coarse salt and freshly ground pepper
  • 1 1/2 cups coarsely chopped fresh cilantro
  • 1/2 cup salted peanuts, coarsely chopped
  • 2 scallions, finely chopped

Directions

  1. Step 1

    Zest limes into a bowl. Squeeze in juice from 1 lime, and whisk in fish sauce and sugar.
  2. Step 2

    Preheat grill to high. Brush shrimp with oil on both sides, and lightly season with salt and pepper. Grill until pink and firm to the touch, 2 to 3 minutes per side.
  3. Step 3

    Toss shrimp with fish-sauce mixture, cilantro, peanuts, and scallions. Juice remaining lime over shrimp.

Greet the weekend with this fruity, tropical cocktail.

2 Cups Pineapple Juice
2 Cups Orange Juice
2 Cups Cranberry Juice
2 Cups Guava Nectar
1 Cup  Apple Juice
1 Bottle Sparkling Wine

Combine the juices and nectar in a large bottle. Stir in the sparkling wine.
Garnish with sliced star fruit and/or limes.

When the weather cools down outside, the kitchen heats up inside.
 
Try this hot Crab and Shrimp Dip for Football Sunday.
 
Mayonnaise                                1/2 cup
Whole Grain Mustard                 1 1/2 teaspoon
Garlic Powder                             1/2 teaspoon
Lemon Pepper Seasoning              1/4 teaspoon
Lump Crabmeat                           1/2 pound
Cooked Shrimp                            1/2 cup chopped (about 1/4 lb)
Shredded Smoked Cheese             1/3 cup
Sliced Almonds, Toasted               1/3 cup
 
Combine the Mayonnaise, Whole Grain Mustard, Garlic Powder and Lemon Pepper Seasoning in a small bowl.
 
Stir in the Crab, Shrimp and Cheese.
 
Spoon mixture into a baking dish and bake at 375 for 15 - 20 minutes or until bubbly.
 
Sprinkle the top with the Toasted Almonds.
 
Serve with toasted baguette, bagel chips, crackers or pita chips.

Pumpkin Cream Cheese

Cream Cheese        8 oz softened
Canned Pumpkin    1/2 cup
Sugar                     1/4 cup
Pumpkin Pie Spice  3/4 teaspoon
Vanilla                   1/2 teaspoon

Beat all ingredients in a medium mixing bowl with an electric mixer on medium speed until smooth.

Cover and refrigerate for at least 1 hour or up to 24 hours.

Makes 1 1/2 cups (24 tablespoons)
